Crockpot Fajita Soup

Who's ready for fall?  I am!! Soup is one of the things I look forward to as the weather turns colder.  This Crockpot Fajita Soup is so easy and delicious!

In the fall and winter, my crockpot gets a workout and this soup becomes a regular on our menu.

I love fast easy recipes and this one couldn't get any easier, seriously!

Here are the ingredients.

Crockpot Fajita Soup Ingredients

All you have to do is dump the cans into the crockpot and turn it on low.  Well, you do need some cooked meat, I like to use chicken.  I like to cook large bathes of chicken and freeze it, so it's always ready to go.

You don't have to, but adding a fresh jalapeño and tomato is nice if you have it on hand.

Fajita Crockpot Soup

1 can kidney beans
1 can black beans
1 can diced tomatoes & green chilies (I use Rotel)
1 can chopped green chilies
2 cans tomato sauce
1 packet of fajita seasoning mix
2 cups chopped chicken
Optional: tomato, jalapeño, a can of corn

Mix all the ingredients into a crockpot and cook on low for 4 hours. Done!

Easy enough?😍

We also like to add a bit of sour cream, cheese and some tortilla chips, just to make it a little extra yummy!
