National S'mores Day {S'Mores Cookies}

I just realized that today is
officially
National S'mores Day!
Well, if I had clued in earlier this would have been out this morning...
Oh well!
My daughter and I just made these the other day 
and I've been meaning to get this out.
While my daughter was in the Bahamas, my son found this devilishly sinful recipe for s'more cookies.  My daughter said that she would make some when she came back!
When she looked at that recipe you had to sandwich
 a s'more with cookie dough.
Well, we tried it, but it was way too hard to do.
The cookie dough was sticky and made a mess.
Hubby was sitting there and started discussing options.
This is what we came up with (mostly hubby's idea).  This was much, much easier and very, very good!!!

Drop everything and make them!
Here's how we did it.
Start with your favorite chocolate chip cookie dough recipe.
Or you can always just buy a roll of it.
Then you'll need your typical s'more ingredients.
 Marshmallows, graham crackers, and chocolate bars.
First, spoon out about a tablespoon of cookie dough on to your cookie sheet.  I always use parchment paper.  I'm lazy, I don't want to wash the pans....
Then break up your chocolate into individual pieces, and smash it into the cookie dough.

See how they are all smashed in?
Then split the marshmallow in half.  
Just tear them, it's pretty easy.
We mashed them with our fingers to flatten them out.  Then we placed it on top of the chocolate.


Okay, here comes the fun part....
Place a graham cracker on top of the marshmallow.

Now, you aren't done yet.  You have to sort of seal the cookie dough up to the graham cracker.  So that the chocolate and marshmallow dont melt out everywhere.
It's not perfect, but for the most part they are sealed and ready to bake.
350 degrees for about 10-14 minutes.
They came out so good!!

The yumminess stayed inside.  Oooo... Yum!
I love the way the graham stayed crispy with the soft cookie and gooey middle... Are you drooling yet??
They were so much easier and everyone in my house thought they were amazing!
