Easy Pineapple Sponge Cake

This cake is one of the easiest cakes to make, not to mention that it is delicious.  Perfect for a hot summer day, it's so refreshing and light. 

And there are only 2 ingredients! Yes, you read that right! 

All you need is a package of angel food cake mix and 1 can of crushed pineapple.

Pineapple Sponge Cake Ingredients

One thing I will caution you on.... not all angel food cake mixes are created equal.  I normally shop at Aldi and I picked up their angel food cake mix.

That mix comes in two parts.  There's the problem.  I tried just mixing the two pouches together and then added the pineapple.  It did not work.  It was the weirdest thing.  The bottom of the cake turned to this hardened gelatin-ish concoction and the top part was the pineapple cake.  Weird....

The Betty Crocker Angel Food Cake Mix is an all in one mix.  That's the kind you want to get.  

All you have to do is fold the cake mix and crushed pineapple together.  The cake mix directions recommended not to use a plastic bowl.

Mixing Angel Food Cake Mix and Pineapple

Preheat your oven to 350°.  Once mixed, pour it into an ungreased nonstick pan.  You can use an angel food cake pan, or a 13x9, or even loaf pans.  I wouldn't recommend a bundt pan.

I used 8" loaf pans and was able to make 3 loaves out of one mix.  I baked them for about 45 minutes.  You need them to be brown and cracked on the top.

Sliced Pineapple Sponge Cake

I learned that the best way to cut it into slices, was to use a serrated knife and saw back and forth.  After the first slice, you'll notice that the knife is sticky.  I wiped it off with a wet paper towel and the next cut was so easy to slice.

1 box angel food cake mix (make sure it's not in 2 parts. You need and all in one mix)
1 20oz. can crushed pineapple

Preheat oven to 350 °.  Mix ingredients together in a non plastic bowl.  Pour into ungreased nonstick pans.  Bake according to the pan you use.  I used 3 - 8" loaf pans and baked them for 45 minutes.
