Dreamy Pumpkin Cupcakes

When I first took a bite of these delightful cupcakes, I thought... OMG!  These are the best I have ever baked!!!

The combination of the super moist cupcake and the creamy dreamy frosting was absolutely amazing!!

For these super easy cupcakes all you need is:

A yellow cake mix, vanilla instant pudding mix, and a 15oz. can of pumpkin (puree).

All you have to do is mix all the ingredients together.  Nothing special, seriously!

The mixture might seem a bit stiff and dry.  It's fine! Then scoop and plop into cupcake liners in a muffin pan.  Bake at 350° for 20-25 minutes.

They puff up some, but not a lot.  They are so moist, without any eggs, oil or water!

Now, for the best part! Frosting! It is so dreamy, yummy and, easy!

These are the ingredients:
1 pkg. Neufchatel cream cheese (soft)
1 stick of butter
1 ½ Tbl. of maple syrup
1 tsp. cinnamon
1 tsp. vanilla extract
3 cups powdered sugar

Using a mixer, cream the butter and cream cheese together.  Then add the spices and mix them in. Next add the powdered sugar, a cup at a time.  Be careful, the powdered sugar could poof all over you!

You must taste it at this point, grab a spoon and taste! Amazing, right???

I usually pipe frosting on cupcakes, because it's fast and easy!  I have some decorator tips.  I don't use a piping bag. I just use a gallon ziplock bag and snip the corner off and push the tip through.  Fill up the bag with the dreamy frosting.

Squeeze and swirl onto the cupcake.  Then I added a pumpkin kiss on top! 😍

Easy Dreamy Pumpkin Cupcakes:

Yellow cake mix
Vanilla instant pudding mix
1 - 15oz. can of pumpkin (puree)

Mix together, and bake in cupcake pan with cupcake liners.  Bake at 350° for 20-25 minutes.

Frosting:

Cream the cream cheese and stick of butter together until light and fluffy.  Add maple syrup, cinnamon, and vanilla, then mix.  Add powdered sugar one cup at a time.  Mix until smooth and creamy.

  5. I must say, a 3 ingredient cupcake couldn't get any easier - I'll have to give your style of cream cheese frosting a try - we just make the regular recipe but it's great!
